Double Mushroom Miso Soup

6 cups vegetable broth (I used No-chicken Broth)1/2 cup (.35 ounce) dried sliced shiitake mushrooms1 tablespoon dried shredded wakame (optional, but good)1 cup sliced white mushrooms1/2 carton (about 6 ounces) firm silken tofu, cut into 1/2-inch cubes (I used Mori-nu Lite)2-3 tablespoons white miso.

The other night a friend asked, "What do you eat?" As a vegan who eats only fruits, vegetables, legumes and whole grains -- she was curious as to whether there was adequate variety to the low fat vegan diet lifestyle.

One of the delights of this eating style is the variety of delicious foods and recipes. It is fun discovering new food options such as the above recipe from a great website . In future posts I will include some of my favorite recipes. Never fear, with this way of eating there is plenty of great food.
